We prove that observables that exhibit eigenstate thermalization in single-particle sector equilibrate in many-body sectors of quantum-chaotic quadratic models. Remarkably, the same observables do not exhibit eigenstate thermalization in many-body sectors (we establish that there are exponentially many outliers).
