Quantum multi-source-extractors were considered by Kasher and Kempe (for the quantum-independent-adversary and the quantum-bounded-storage-adversary), Chung, Li and Wu (for the general-entangled-adversary) and Arnon-Friedman, Portmann and Scholz (for the quantum-Markov-adversary).
