We present a new class of direct detection signals; absorption of fermionic dark matter. We enumerate the operators through dimension six which lead to fermionic absorption, study their direct detection prospects, and summarize additional constraints on their suppression scale. Such dark matter is inherently unstable as there is no symmetry which prevents dark matter decays. Nevertheless, we show that fermionic dark matter absorption can be observed in direct detection and neutrino experiments while ensuring consistency with the observed dark matter abundance and required lifetime. For dark matter masses well below the GeV scale, dedicated searches for these signals at current and future experiments can probe orders of magnitude of unexplored parameter space.

MeV Electrophilic Axion-like Particles from Sun
MeV axion-like particles could be made when 5.5 MeV solar fusion photons Compton-scatter off electrons; current LZ, PandaX-4T and Borexino data would then constrain g_ae to (1.7-3.7)e-6 in the 0.4-1 MeV window.

Supernova cooling from neutrino-devouring dark matter
Supernova cooling excludes fermionic dark matter produced by neutrino scattering down to cross sections of about 10^-58 cm^2 for electrons and 10^-56 cm^2 for nucleons across the keV to 100 MeV mass range.

Sensitivity of nEXO to $^{136}$Xe Charged-Current Interactions: Background-free Searches for Solar Neutrinos and Fermionic Dark Matter
A new delayed-coincidence tag from 136Cs isomers could let the nEXO detector reject backgrounds down to 10^-9 and measure CNO solar neutrinos, the 7Be neutrino energy, and sub-MeV fermionic dark matter.

Probing Light Dark Particles in Neutrino Scattering Experiments
A dark fermion produced in neutrino scattering could be probed at DUNE's near detector up to cutoff scales near 1 TeV, beyond CHARM II and LEP, while current COHERENT/CONUS+ limits stay below LHC bounds.
